Sourced primarily from clones 376 and 530 the vines grow in the centre of the Greystone vineyard on deep, silty-loam soils.   A long Indian summer encouraged perfect ripening conditions and fruit was picked with beautiful acidity.  Small open bunches ensured clean ripe fruit went to the winery.
Harvest Details - Picking Date: 14 April to 30 April 2016

Grapes were gently pressed to tank for brief settling, then transferred to French oak barrels for natural fermentation with wild yeast.  10% malolactic fermentation contributes a creamy and textural element. Naturally settled in barrel for six months on full yeast lees post fermentation, then blended and bottled on site without fining.

Harvest Notes

2020 was a gently warm and dry year for Waipara although harvesting under Covid restrictions made life tricky. Luckily the autumn meant the fruit was pristine and fully ripened.

Viticulture

In our vineyard we grow two rare clones of Sauvignon Blanc ( 376 and 530 ), originally taken from the Loire Valley. This is very different from the rest of New Zealand, which generally uses a singular Bordeaux clone. Our vines produce much smaller bunches with golden coloured grapes - the MS Bordeaux tends to a heavier bunch size and more green tinged. Our clones give us beautiful fruit flavours of golden kiwifruit, ripe pineapple and guava.

Vinification

Natural, traditional winemaking with wild yeast and hand plunging

Maturation

Naturally settled in barrel for six months on full yeast lees post fermentation
